We have a hugely exciting opportunity for a Food Production Manager to join our DO & CO Family in Miami, FL. Reporting to the Operations Manager, you will be responsible for working as part of a team, responsible for the coordination of a designated food production area. The designated manager functions as a link between Planning & Production, Product Quality and the customer facing Front End entailing Events, Charters, Account coordination.

Responsibilities:  

 

  • Manage and overview daily Planning & Production, the meal presentation, and the product quality for assigned kitchen.
  • Make sure all areas are kept well organized and all stock refills are ready for the next day. 
  • Identify problematic areas and suggest solutions within the cosigned sector. 
  • Make sure golden samples are used, team members follow specs, all documentations are completed, and random checks are done. 
  • Lead and motivate the food production team.  
  • Review production plan daily & communicate with team.
  • Support in streamlining current process, e.g., accessibility, quality, and production assurance to guarantee best productivity.  
  • Adhere to food safety compliance, HACCP regulations, and FDA regulations. 
  • Responsible for adherence to Personnel Practices (GMP’s) and Processing Practices within the scope of the position.
  • Train and monitor new hires and ensure accurate staffing level.
  • Monitor attendance and meal breaks.
  • Manage production controls systems including daily production processes.
  • Motivate, train, schedule and leads and food assembly helpers.

Qualifications:

• Experience in a high-volume food service or food manufacturing establishment  

• Culinary knowledge in terms of procedures and practices  

• Ability to manage multiple priorities and meet timeline goals and deadlines. 

• Knowledgeable in using Microsoft: Word, Excel, Outlook  

• Strong leadership skills  

• Hazard Analysis Critical Control Point (HACCP) and general food safety standards knowledge is required. 

• Knowledge of catering set-up procedures and presentation skills  

• Ability to communicate and write in English  

• Ability to work with a diverse group.

• Ability to multi-task and work well in a fast-paced environment.  

• Ability to work well in a team as well as independently. 

• Hands-on approach, self-driven and dedicated personality 

• Be flexible to be on different shifts, weekends, and holidays.
